Martimucci Trofie are the fresh pasta shape that pays tribute to the Ligurian pasta-making tradition. With ancient origins, the first appearance of trofie dates back to the Crusades when Ligurian women would roll small pieces of pasta around a wooden knitting needle-like tool and then gently press them with their hands.
